Summertime = Grill time!
I know, I know…the clean food purists will say grilling food equates to carcinogens on your food. However, I am all for moderation…besides, who doesn’t love the unique and smoky flavor that the outdoor grill imparts on our favorites foods? That being said, it is important to remember that the shorter the time of exposure to heat, and the lower the heat, the less the nutrient loss. And refrain from charring your food….never a good thing.
One of my go to summertime favorites are grilled fish tacos. In Southern California we love our fish tacos and are used to having them with some lime, cabbage and perhaps some avocado. This time I decided to try grilling my avocado after reading the latest issue of Bon Appetit. Grilled avocado is one of those things that sound faintly ridiculous until you try it—then you wonder why you never had it before.
Just cut avocado in half, remove seed, season with a little olive oil, salt and pepper and grill cut side down on cooler portion of grill (I turned these over to show you the pretty grill marks). It only takes about 5 minutes, depending upon your grill heat. I also grilled my limes and cabbage (in a grill basket – not shown) and some sliced potatoes (reminiscent of fish and chips). Maybe a little grill happy, but summer makes me happy Enjoy!
